Spicy Carrot Balls with Sweet & Sour Sauce


Makes 100/20 portions

Ingredients

  • 6kg/1.6kg Grated carrot
  • 3kg/600g Potatoes, cooked and mashed
  • 1kg/200g Onions chopped
  • 50g/10g Spicy sauce/harissa 
  • 30g Cumin grounded
  • 100g/20g Chopped parsley
  • 2kg/400g Chickpea flour
  • 75g/15g Garlic puree
  • 75g/15g Ginger pulp fresh
  • 50g/10g salt
  • 1 tbsp/1 tsp pepper

Method

Carrot balls

  1. Mix all the ingredients together to make a good carrot mixture
  2. Form the carrot balls and fry on griddle or in oven at 180c for 20/25 mins

Sweet & sour sauce

  1. 400mls crushed pineapple
  2. 60g tomato pure
  3. 10g crushed garlic
  4. 30mls white vinegar
  5. 20mls soy sauce
  6. 600ml water
  7. Cornflour/arrow root for thickening
